It will only fully load the chunk where the ender pearl is, which means that it will process random ticks even if you are far away. So, your crops will always keep growing as long as you are in the game. Another cool thing is that in the surrounding 3x3 chunk area, redstone processing still works even though random ticks don't. That means your item sortters, super smelters, and other redstone contraptions will stay fully functional across that 3x3 chunk area.
